How do I make my maps totally free form?  I want my topics and subtopics right where I want them on the page.  NOT where MindManager want to put them.

On the line between the central topic and the main topics you see a little white circle
If you click on that you can move your topics anywhere on the map and they still remain connected.
The circle will change into black to show you have moved the topic(s)

Also if you click on a topic with the shift key pressed, you can move the topic anywhere without the hassle that is wants to connect to the central topic.

And you can use the floating topics. Just click anywhere on the canvas and start typing.
Once filled with text eg, you can add subtopics to them etc etc.

As Ari's response shows there is a lot of flexibility in MindManager but it was never designed to be a completely free-form concept mapper. There are other programs designed specifically to do this but if you want to do it within MM take a look at the Network Builder add-in from Olympic Ltd:
