the sync between Outlook and MM2016 works fine, In two things I ́m not sure, how to proceed: Is it possibel to sync deletions between the two (i.E. deleting a Todo in Outlook => Deletion of that item in MM)
Does anyone have any best practice tips on that ??

I don't use outlook anymore but as I recall from memory .... and as MindManager HELP tells us:
Work with Microsoft Outlook

What do you want to do?

Maps can contain topics  that are linked to and synchronized with their Outlook counterparts. These are called linked Outlook item topics You can then edit the associated Outlook items directly from within MindManager by editing the linked topic - your changes are synced to the Outlook item. Likewise if the item is edited in Outlook, those changes are synced to the map, and the topic will change.

You must have Outlook 2003 or later installed on your system to use these features.

Linked Outlook item topics show special icons that indicate the type of item they are linked to:

Normally your mindmap syncs when:

Opening the map

or use F5

Yes deletion works
but only when you use Outlook requests in MindManager (The request itself is a topic and the results of the request are tocpic located one level further). If a task is deleted in Outlook, the request won't find it anymore and thus won't create the topic or will delete it when the request is updated.
It doesn't work the other way :  each time you delete it in MMR it will reappear in the result of the research in MMR because it has no impact on Outlook.
Last case : if you don't use requests but direct link between Outlook and MMR, when you delete a task in Outlook, you will still find it in MMR but the link will be shown as broken.
I hope this is clear enough and that helps,
