I wanted to remove the SharePoint Items from the Insert Ribbon but I am not allowed to:

Andrew, you can remove a default 'group' but you cannot edit the items inside a default group.
To get your desired result, create your own version of the map data group and add Map Parts, Insert Map, Mindjet Tasks and Outlook Items. Or, alternatively, you could go to Mindjet options and turn off the SharePoint add-in.

By Groups do you mean Main Tabs aka Ribbons?
Is it fair to say the Customisation function is for creating your own collection of functions in a new Main Tab rather than editing existing Ribbons?

No, I'm referring to the sections within each tab. For instance, in the home tab, you have the following groups -- clipboard, add topics, topic elements, font, etc... You're able to add / remove groups to any ribbon tab. You cannot, however, modify the contents of the group. Instead, you can create your own groups and modify the contents exactly the way you'd like to see them.
Does that make sense?

Thank you It does. I have made my own Ribbon and removed a group from a default Ribbon.
And then pressed the Reset button! Which behaved as expected removing my Ribbon and reinstalling the group I deleted.
